Marinades add tenderness and flavor to meats and poultry. Chicken and turkey pieces take on added flavor and juiciness when a marinade is used. Poultry should be placed in the refrigerator when marinating longer than one hour. Poultry should not be marinated any longer than a couple of hours or it will break down and become mushy. Marinated poultry is delicious when cooked on the grill or in the oven.
In a saucepan, combine the soy sauce, water, sherry, ginger root, chilies, garlic and onion.
Bring the mixture to a boil, reduce the heat and simmer uncovered for 15 minutes.
Cool the mixture and pour it into a bowl.
Add chicken pieces or chicken halves to the marinade. If you're marinating turkey, cut it into smaller pieces. For example, a half breast and then separate legs and thighs. Cover the meat and refrigerate it in the marinade for one to two hours.
