Instead of the usual eggs and bacon on a plate with a slice of toast, surprise your family with a breakfast pizza that combines your breakfast favorites into one handy meal. The only must-have ingredient is the pizza crust. Stick to eggs and your choice of breakfast meat, or add other ingredients and spices for a more flavorful and interesting pizza.
Preheat the oven to 350 °F (177 °C).
Line a baking sheet with aluminum foil and set aside.
Slice tomatoes with a sharp knife.
Toast English muffin halves in a toaster. Then, carefully remove English muffins from toaster.
In a medium bowl and using a whisk, combine eggs, milk, garlic, salt and pepper. Then, set aside.
Heat up a nonstick skillet to medium heat, then melt the butter.
Add egg mixture to skillet. Using a spatula, flip the omelette once the bottom side is cooked. Cook the other side, and remove from heat.
Arrange English muffin halves on prepared baking sheet. Top each English muffin half with 1-2 tomato slices, a slice of bacon, and some of the omelette. Sprinkle each with 1/4 cup of cheese.
Place baking sheet in oven and bake for 10 minutes or until cheese is melted and bubbly. Using oven mitts, remove from oven and place baking sheet on a wire rack to cool for a few minutes.
Transfer mini pizzas to plates and enjoy your breakfast.
