A recipe to make a very tasty sweet n’ sour mixed vegetable pickles in less than 40 minutes.


Step One

Ingredients : 2/3 fresh carrots, 2 turnips, Cauliflower, Onions, Ginger, Green chili, Garlic, Salt, Chili powder, Sugar, Fennels, Cumin powder, Coriander powder, Dried mango powder, Circa.


Step Two

Wash all the vegetables, dry them, peel the carrots and turnips and chop them, and chop the cauliflower into small pieces. Put all these on a dry cloth and leave it for drying under a fan for 2/3 hrs.


Step Three

After 3 hrs, cut onions, ginger, green chili, garlic and blend it making the paste.


Step Four

Take 3 spoons of oil in a pan and fry this paste. Put salt, chili powder, sugar as per the taste. Put grinded fennels, cumin powder, coriander powder and dried mango powder and cook it for 5-7 minutes.


Step Five

Mix all the cut vegetables in this paste. Cook for 8-10 minutes. Let it cool down.


Step Six

Put this pickle in a jar and add 5 tea spoons of circa to it. Mix it well and keep it for a day or two. Your mixed vegetable pickle is ready to be consumed.


Step Seven

Finished and Enjoy.
