Soda water is a necessity during holiday parties for mixed drinks, punch and as a standalone refreshing beverage. Unfortunately, soda water doesn’t keep very well after it has been opened, even with the special lids that are supposed to capture the fizz. Often you just end up throwing out flat water. Homemade soda water allows you to carbonate only the amount you will use. The methods outlined here are appropriate for small amounts of soda water, or for large party usage.
Fill the seltzer bottle with water and screw on the lid. Cold liquid carbonates faster and better than room temperature liquid.
Almost As Easy - Fill a plastic liter bottle with water, screw on the lid and chill it thoroughly. Push the locking ball chuck onto one end of the tube. Use the screwdriver to tighten a lock nut washer onto the tubing.
Turn on the valve on the CO2 tank slowly, watching the regulator valve. It should remain in the green area of the read-out. As soon as it starts edging toward the red area, shut off the CO2 tank. Unhook the ball chuck and the bottle will be full of fizzy water.
