Still I’m not above buying them from the shops and making ghoulish faces to sit outside the front door during Halloween. But what to do with the innards? Ingredients for the Pumpkin Chutney Recipe: 2kg pumpkin flesh 1/2kg dried figs 4 large onions 4 cloves of garlic 1l cider vinegar 1kg demerara sugar 1 dsp ground ginger 1 dsp ground coriander 1 dsp ground cummin 1 cinnamon stick 1 hot chilli 1 tsp sea salt
As the mixture reduces begin to stir even more frequently. Boil the mixture down until you can just see the bottom of the pan appear when you drag the spoon across it. Remove the cinnamon stick and try and find the chilli – hee hee!!
