One of my favourite things about Summer is eating hot, buttery, fresh corn on the cob. I miss it during the winter months when fresh produce is limited. But freezing fresh corn for later months is easy and tastes better than the bags or cans you can buy at the store. Here’s how to freeze corn from your local grocery or farmer’s market.
Step One
Prepare by starting a large pot of water boiling on the stove and filling a large Tips for freezing cornbowl (or clean kitchen sink) with cold water and lots of ice.
Step Two
Husk the corn, removing as much silk as possible (put your kids to work!).
Step Three
When water is is boiling, drop cobs of corn in water and blanch about 5 minutes.
Step Four
Remove from boiling water and immediately submerge in ice water about 5 minutes.
Step Five
Using a sharp knife (or an amazing corn peeler), cut the corn off the cobs.
Step Six
Portion corn kernels in freezer bags or containers.
Step Seven
Lay flat to freeze.
Step Eight
To serve, reheat in microwave or on stovetop. Enjoy your summer harvest year-round!
