Marinades add tenderness and flavor to meats and poultry. Chicken and turkey pieces take on added flavor and juiciness when a marinade is used. Poultry should be placed in the refrigerator when marinating longer than one hour. Poultry should not be marinated any longer than a couple of hours or it will break down and become mushy. Marinated poultry is delicious when cooked on the grill or in the oven.
