Mussels make a delicious and impressive entree. They are a seemingly mysterious seafood, and they can become your specialty. You can use them for a beach party, or just as an appetiser. The following article discusses how to cook mussels at home.
Step One
To make the green olive sauce, place the green olives, capers, parsley, cilantro, 3 tablespoons of olive oil, sherry vinegar, lemon juice, salt and pepper into a food processor. Blend until almost smooth. Adjust salt and pepper to taste.
Step Two
Rinse the mussels and discard any that do not close when tapped.
Step Three
Heat 2 tablespoons of olive oil in a large pot. Add the garlic, shallots, chile, lemon and thyme. Cook for about 5 minutes over medium heat.
